After horseback riding in Camargue you can taste dishes based mainly on the meat of bulls bred in the area.
One of the specialties that you will find in all restaurants is Gardianne De Taureau, a tasty stew of bull meat marinated in wine and cooked over a low heat for several hours, generally served with rice but, of course, each restaurant has its own recipe.

Among the most consumed fish there are mussels, seafood and cockles.
Another local specialty is olives, often accompanied by anchovies and capers, while among the most popular cheeses there is the chevre tomino, a goat cheese served on crispy toasted bread with honey and a drizzle of oil.

The Camargue kidnaps the heart for the harsh nature of its nature and its inhabitants, still deeply tied to traditions and who prefer mosquitoes to tourists.
It is not a rare case but it is normal to come across old women in traditional costumes, in the guardians with black felt hat, floral shirt and neck scarf and gypsies in their caravans and guitar in hand.

In Camargue everything takes place according to the relentless but slow rhythms of the natural cycle, from the breeding of cattle to the cultivation of rice, from the collection of salt in the salt pans to fishing in the ponds.
Visit the center of Saintes-Maries-de-la-Mer and climb the roof of its cathedral at sunset to see, in all its beauty, this land of water lying at your feet that takes on unique nuances and, afterwards, organizes a fun evening picnic on the beach.

Buy some typical delicacies and go to the beach, obviously accompanying the food with one of the Camargue’s “Des Sable” wines, while the sun ignites the sky with a thousand shades of red.
You can also watch one of the bullfights held at the Saintes-Maries-de-la-Mer Arena, absolutely non-violent because no bulls are hurt and have nothing to do with the Spanish ones.
In these bullfights the bull is not killed and the whole thing consists in an attempt to take away the cockades that are placed on his head.
